Chicken Soup Recipe:
Ingredients:
- 1 whole chicken, about 3-4 pounds
- 8 cups chicken broth
- 1 onion, finely chopped
- 3 carrots, peeled and sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup egg noodles or rice (optional)
- Fresh parsley for garnish
Instructions:
-
Rinse the chicken under cold water and place it in a large pot. Add the chicken broth and bring it to a boil. Skim off any foam that rises to the surface.
-
Reduce the heat to a simmer and add the chopped onion, sliced carrots, sliced celery, minced garlic, thyme, rosemary, salt, and pepper. Cover the pot and let it simmer for about 1-1.5 hours, or until the chicken is cooked through and tender.
-
Remove the chicken from the pot and let it cool slightly. Once it's cool enough to handle, shred the chicken into bite-sized pieces using a fork or your hands.
-
If you're using noodles or rice, add them to the pot and cook according to the package instructions.
-
Return the shredded chicken to the pot and let the soup simmer for an additional 10-15 minutes to allow the flavors to meld. Adjust the seasoning if necessary.
-
Serve the chicken soup hot, garnished with fresh parsley.
Enjoy your homemade chicken soup!
