Chicken Soup

Chicken Soup Recipe:

Ingredients:

  • 1 whole chicken, about 3-4 pounds
  • 8 cups chicken broth
  • 1 onion, finely chopped
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 cup egg noodles or rice (optional)
  • Fresh parsley for garnish

Instructions:

  1. Rinse the chicken under cold water and place it in a large pot. Add the chicken broth and bring it to a boil. Skim off any foam that rises to the surface.

  2. Reduce the heat to a simmer and add the chopped onion, sliced carrots, sliced celery, minced garlic, thyme, rosemary, salt, and pepper. Cover the pot and let it simmer for about 1-1.5 hours, or until the chicken is cooked through and tender.

  3. Remove the chicken from the pot and let it cool slightly. Once it's cool enough to handle, shred the chicken into bite-sized pieces using a fork or your hands.

  4. If you're using noodles or rice, add them to the pot and cook according to the package instructions.

  5. Return the shredded chicken to the pot and let the soup simmer for an additional 10-15 minutes to allow the flavors to meld. Adjust the seasoning if necessary.

  6. Serve the chicken soup hot, garnished with fresh parsley.
